Free-range chicken breast and thigh are combined for the right balance of texture and fat, then seasoned with fresh scallion, ginger, and toasted sesame oil.
The broth inside is a reduction of our house chicken stock β clear, aromatic, and loaded with natural collagen. When the aspic melts inside the wrapper during steaming, it creates a clean, flavourful soup that is distinctly different from the heavier pork broth. Subtle, nuanced, and quietly addictive.
Pick up gently with chopsticks and lower into your ceramic spoon. The chicken XLB is as delicate as the classic β handle with care.
