Most XLB are built on pork β€” it's the traditional base and the richest flavour profile. Our Chicken XLB is for those who want the full soup dumpling experience with a cleaner, lighter profile. Free-range chicken breast and thigh are combined for the right balance of texture and fat, then seasoned with fresh scallion, ginger, and toasted sesame oil.

The broth inside is a reduction of our house chicken stock β€” clear, aromatic, and loaded with natural collagen. When the aspic melts inside the wrapper during steaming, it creates a clean, flavourful soup that is distinctly different from the heavier pork broth. Subtle, nuanced, and quietly addictive.
