How to Freeze Dumplings Without Sticking (The Right Way)

Every batch of homemade dumplings produces more than you can eat in one sitting. Here's how to freeze them so they come out perfect — not fused into a single mass.

The One Mistake Everyone Makes

Putting fresh dumplings directly into a zip-lock bag or container and freezing them. The result: a solid frozen clump where every dumpling has fused to its neighbor. When you try to cook them, the skins tear as you separate them and you lose all the filling.

The fix is a two-step process that adds approximately 2 hours but results in individually frozen dumplings that never stick together.

Step 1 — Flash Freeze on a Tray

Line a baking sheet or flat tray with parchment paper. Dust lightly with flour or cornstarch. Place dumplings on the tray in a single layer, not touching each other. Transfer to the freezer for 1–2 hours until each dumpling is individually frozen solid.

This is the critical step. Once the surface of each dumpling is frozen, it won't stick to anything.

Step 2 — Transfer to Storage Bags

Once individually frozen, transfer to zip-lock freezer bags or airtight containers. Press out as much air as possible before sealing. Label with the date and filling type. Stored properly, frozen dumplings last up to 3 months with no quality loss.

Cooking Frozen Dumplings (No Thawing Required)

The great advantage of properly frozen dumplings is that they cook from frozen with no change to the method or timing. For pan-frying: add 30 seconds to the initial sear and 1–2 minutes to the steam time. For steaming: add 2–3 minutes. For boiling: add 2–3 minutes and wait until they float, then cook 3 more minutes.

Never thaw dumplings before cooking — thawed dumplings become fragile, sticky, and difficult to handle.

Raw vs. Cooked: Which to Freeze?

Always freeze raw, uncooked dumplings. Cooked dumplings lose their texture when frozen and reheated — the skin becomes tough and the filling dries out. Freeze immediately after wrapping, before any cooking. The raw frozen dumpling is essentially identical to a fresh one when cooked directly from frozen.
