Brown Sugar Boba β sometimes called Tiger Milk Tea or Tiger Sugar β originated in Taiwan in the early 2010s and became a global phenomenon for its visual appeal: the dark caramel syrup is poured down the interior sides of a clear cup in thick stripes, creating the tiger-stripe pattern before the milk is poured in. The result is a drink that looks as good as it tastes.
The caramel depth is real β not artificial colouring. Taiwanese black sugar is a raw, minimally processed cane sugar with a deeper, more complex flavour than refined white sugar or regular brown sugar. We cook our tapioca pearls fresh daily and soak them in the same black sugar syrup, so the pearls themselves carry the caramel flavour throughout. Stir before drinking to incorporate the stripes; the first sip unmixed is intensely sweet, the last sip unmixed is just milk.
