Cold sesame noodles (ιΊ»ι ±ι’) are one of the great portable, satisfying dishes of Chinese street food β deceptively simple ingredients that come together into something far more complex than the sum of their parts. The key is the sauce: a smooth, nutty tahini base extended with sesame oil, black vinegar, soy, chili oil, and a small amount of sugar. The result is simultaneously rich, acidic, spicy, and sweet β four flavours working together in each slippery, saucy bite.
Our noodles are fresh wheat noodles, cooked al dente and tossed with the sauce while warm so they absorb it fully. Served at room temperature β the ideal temperature for the sesame sauce to coat the noodles without congealing.
