What Is Char Siu Bao?

Char Siu Bao (ε‰η‡’εŒ…) β€” Steamed BBQ Pork Buns β€” are one of the most recognisable dishes in Cantonese dim sum. The name comes from char siu (Chinese BBQ pork) which is the filling: slow-roasted pork glazed with a sauce of soy, oyster sauce, honey, and five spice until caramelised and sticky. Encased in a fluffy, slightly sweet steamed dough and sealed at the top, the bun steams until the dough is impossibly light and the filling heats through to a sticky, jammy consistency.

Ours are made with house-prepared char siu β€” not bought-in, not reheated. The pork is marinated and roasted in-house, then cooled, diced, and combined with the sauce before being wrapped and steamed fresh to order.

FAQ

How is this different from the Pan Fried Pork Buns?
The Steamed BBQ Pork Buns use a different dough (softer, sweeter, milk-enriched) and a completely different filling (char siu β€” sweet BBQ pork) versus the savoury minced pork in the pan-fried version. The steamed bun is uniformly soft throughout; the pan-fried bun has a contrasting crispy base.
Is the char siu made in-house?
Yes β€” we roast our own char siu pork. It's marinated overnight and roasted fresh each morning.
Why only 3 pieces instead of 6?
Char Siu Bao are larger than individual dumplings β€” each bun is roughly 3x the size of a dumpling. Three pieces is a generous serving.
